Mini Bacon & Tomato Quiche Recipe

You can use egg substitute, low fat mayonnaise and Swiss cheese for a low cholesterol

Tomato
Quiche Recipe
1 cup grated cheddar cheese
3 tablespoons flour
4 eggs, beaten tell fluffy
2/3 cup mayonnaise
1/2 cup fine chopped sun dried tomatoes
8 slices bacon, cooked, crumbled
1/4 cup fine chop mushrooms
1/4 cup fine chop onions
1 teaspoon old bay season
Dash ground pepper
2 tablespoons chopped black olives
Cook beacon and drain on a paper towel, crumble and set aside. In a
food processor chop the sun dried tomatoes, mushrooms & onions, set
aside. In a bowl toss grated cheddar cheese with the flour. Add 3/4
of the bacon to the tomato mixture and the remaining ingredients;
mix well.
In a small glass bowl beat eggs until fluffy. Stir into
tomato mixture. Spray the mini muffin tin with cooking spray. Fill
cups 3/4's full and sprinkle a pinch of beacon on top. Bake at 350
degrees for 18 to 20 minutes or until edges are golden. Makes about
