These muffins can be put in a single zip lock bag and frozen. Then
put in lunch boxes and will be thawed in a couple of hours. |
Easy Peanut Butter Puff
Muffins
What a wonderful way to start a day or have a snack with these tasty
nutritional peanut butter
muffins.
2 cups sifted - all purpose
flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup Crunchy Peanut Butter
2 tablespoons butter or margarine
1 cup milk
2 beaten eggs
1/2 cup currant jelly, melted
1/2 cup finely chopped roasted peanuts.
Preheat
oven. Stir together flour, sugar, baking powder and salt. Cut in
peanut butter and butter or margarine till mixture resembles coarse
crumbs. Add milk and eggs all at once, stirring just till moistened.
Fill
greased muffin pans 2/3 full. Bake in 400ºF oven 15 to 17 minutes.
Immediately brush tops with melted jelly, dip in peanuts. Serve hot. |
